First, preheat oven to 350°F and grease the muffin pan. I dedicate a stick of butter to baking and use it like a glue stick to liberally paint the entire pan with butter to prevent any sticking.
Gather all your ingredients to make Berry Protein Pancake Muffins.
Next, Whisk the pancake mix and protein powder together in a medium bowl.
Next, add milk to the mixing bowl.
Whisk for 3-5 minutes until well blended and not lumpy.
Crack the egg into the bowl and whisk well until all the ingredients are blended.
After that, add the batter to the pan. I used a mini muffin pan and adding a little more than a tablespoon to each or fill each about 75% of the way to the top.
Start adding the fruit to the batter. Be creative and have fun. Cook for 12-14 minutes or until you can put a toothpick in the middle and it comes out clean.
Let cool in the pan for 5 minutes and enjoy. You can change the recipe and add your favorite fruit or you can make this dish into a dessert by adding your favorite chocolaty treats.
