  • 1 Cup Krusteaz Pancake Mix
  • ¼ Cup Protein Powder Vanilla
  • Cup Milk
  • 1 Egg
  • 1 Cup Mixed Berries Fresh or Frozen


  • First, preheat oven to 350°F and grease the muffin pan. I dedicate a stick of butter to baking and use it like a glue stick to liberally paint the entire pan with butter to prevent any sticking.
  • Gather all your ingredients to make Berry Protein Pancake Muffins.
  • Next, Whisk the pancake mix and protein powder together in a medium bowl.
  • Next, add milk to the mixing bowl.
  • Whisk for 3-5 minutes until well blended and not lumpy.
  • Crack the egg into the bowl and whisk well until all the ingredients are blended.
  • After that, add the batter to the pan. I used a mini muffin pan and adding a little more than a tablespoon to each or fill each about 75% of the way to the top.
  • Start adding the fruit to the batter. Be creative and have fun. Cook for 12-14 minutes or until you can put a toothpick in the middle and it comes out clean.
  • Let cool in the pan for 5 minutes and enjoy. You can change the recipe and add your favorite fruit or you can make this dish into a dessert by adding your favorite chocolaty treats.
