
This Crispy Low Carb Cheese Quesadilla is made entirely of cheese, no hidden carbs here. Add your favorite fillings or toppings and enjoy a warm, delicious treat.
Tacos and low carb cheese quesadillas are some of my favorite foods and when I started my Keto journey and found that several ingredients were not on the low carb diet I was beginning, I knew I would have to adapt and make a new recipe if I still wanted to enjoy Taco Tuesday with the family and stay on my low carb high fat diet plan.
I tried a couple different cheeses and cheddar worked the best for crisping up and not burning like other cheeses. If you’re looking for a high protein high fat meal then this is it. You can modify the contents of the quesadilla with even more high fat/protein fillings or other keto approved foods. Check back for more high fat foods for keto.

Step by Step Instructions:
How to Make Low Carb Cheese Quesadilla, No Tortilla
First, cut and prepare all toppings and fillings before beginning the heating process. (These are just examples, add the fillings you love, you do NOT have to use any of these toppings pictured, except cheese.)

Place cheese in the frying pan, coating the bottom of the pan with the cheese. Use a pan 8 inches or smaller.

At the same time, simmer pan on low and add fillings to one side, while cheese is being heated.

Next, the cheese will begin to melt as you add your fillings.

Then, check the edges of the cheese for browning, when browned, turn the heat off.

Fold non-filling side of cheese onto the fillings side using a fork or spatula.

Lastly, transfer the quesadilla to a plate and add additional toppings, if desired.
(Caution: Filling will be hot!)
