I’m always on the lookout for a good muffin and Apple Cinnamon Oatmeal Protein Muffins was a great addition to my recipe book. You know you have a good recipe when all four of your kids ask for seconds.

Secondly, I love the fact that it has 8 wholesome ingredients and that 90% of the time I have the ingredients in my kitchen or pantry. I also really appreciate that to make a whole batch of these I’m only using 2 tbsp of organic raw honey to sweeten the muffin instead of dumping measuring cups of sugar into the batter.

Step by Step Instructions:

How to Make Apple Cinnamon Oatmeal Protein Muffins.

I start the recipe by getting all of my ingredients together and prepping them. In this case, measuring out the milk and oats as well as dicing up the apples.

Next, prep the pan and oven. Distribute the liners you are using into the pan or grease pan with butter or coconut oil and preheat the oven to 350°F.

Then, you need to turn 1 cup of the oats into oat flour in your food processor or blender. I used my trusty Ninja Professional.

After that, you should have 2 bowls of oats. 1 cup of whole oats and 1 cup of oat flour from the previous step.


Next, add all the main ingredients together in a mixing bowl. Both cups of oats, 2 eggs, apples, and protein powder. I usually use vanilla or salted caramel protein powder for some extra flavor.


Now, you can start adding the smaller ingredients. First is 1 tsp of baking powder.


Then, add 1½ tbsp of cinnamon.


Sweeten up this dish with 2 tbsp of Honey. You can use any kind of honey you would like just make sure that the honey is not solid. (needs to mix evenly when mixing ingredients together, if your honey is hard, try warming it.)

Finally, add the 1 cup of milk. You can use whatever milk you like, I used whole milk. Whole milk makes the batter rise more and makes it fluffier.

Mix all the ingredients together by hand or use your KitchenAid Stand Mixer until well blended.

Begin filling, divide the batter between 10-12 muffins.

Fill the liners to the top, they don’t rise much in the oven.


Cook for 16-18 minutes until golden brown and a toothpick can be inserted in the center and come out clean.

  • ¼ Cup Protein Powder of Choice Vanilla or Salted Caramel
  • 2 Large Apple (Diced and Seeded) Pink Lady or Macintosh
  • 2 Eggs
  • 1 Cup Milk of Choice
  • Tbsp Ground Cinnamon
  • 2 Tbsp Honey
  • 1 tsp Baking Powder
